BLT Chopped Salad —

 

Ingredients—

 

2 Cups Butter Lettuce, chopped

2 Cups Romaine Lettuce, chopped

1 Cup Cilantro, chopped with stems

1 Pint Grape Tomatoes, quartered

½ Red Onion, chopped

5 Slices Thick-Cut Bacon, cooked till crispy and crumbled

3 Hardboiled Eggs, Chopped

1 Cup Frozen Corn (Hopefully it’s a bag of ours from the summer!), thawed

1 Avocado, chopped

½ Cup Finely Shredded Cheddar

¼ Cup Finely Shredded Parmesan

1 Lime, juiced

1 TBSP Oregano

Salt and Pepper, to taste

 

Directions—

 

The best part about a chopped salad, is that it’s all chopped up to bite size pieces. So take some time to finely chop the lettuce and veggies. Then throw everything together in a big bowl and mix well. Serve as is, or with your favorite dressing. It’s delicious, filling, and good for you!
