Cowboy Caviar
Ingredients—
Caviar:
1 15oz. Can Black Beans, drained and rinsed
1 15oz. Can Black Eyed Peas, drained and rinsed
1 15oz Can Black Olives, drained and chopped
2 Large Tomatoes, diced
1 Avocado, pitted, peeled, and chopped
1 Red Bell Pepper, diced
½ Red Onion, diced
3-5 Jalapenos, diced, depending on how spicy you like it
3 Ears of Sweet Corn, grilled or boiled, cut off the cob
½ Cup Fresh Cilantro
Dressing:
¼ Cup Fresh Lime Juice
2 TBSP Honey (local is best!)
½ Cup Olive Oil
¼ Red Wine Vinegar
2 tsp Garlic Powder
2 tsp Chili Powder
2 tsp Cumin
Salt and Pepper to taste
Directions—
Step #1—
Add all the caviar ingredients to a bowl and gently stir to combine.
Step #2—
Mix dressing ingredients in a small bowl and whisk until combined. Pour over caviar ingredients. Gently stir to combine. Serve with Nelson’s Tortilla Chips and have the best summer yet.
