Dill Pickle Soup

 

Dill Pickle Soup—

 

Ingredients—

 

5 ½ Cups Chicken Broth

2 lbs. Golden Potatoes, cubed

1 Medium Onion, chopped

2 Cups Carrots, diced

1.5 Cups Dill Pickles, chopped

½ Cup Butter

½ Cup Flour

1.5 Cup Sour Cream

1/3 Cup Water

2.5 Cups Dill Pickle Juice, straight from the jar you pulled the pickles from

2 tsp. Old Bay Seasoning

2 tsp. Cayenne

Salt and Pepper to taste

 

Optional—You can add Diced Ham or Crumbled Bacon at the end if you’re looking for some protein!

 

Directions—

 

Step #1—

 

In a large stockpot, combine chicken broth, potatoes, onion, carrots, and butter. Bring to a boil and cook until potatoes are fork tender. 

 

Step #2—

 

In a separate bowl, mix together the flour, sour cream, and water, making a paste. Once potatoes are soft, whisk paste into soup 2 TBSP at a time. Continue whisking and boiling until lumps of paste disappear and soup slightly thickens.

 

Step #3—

 

Add pickle juice and seasonings. Boil 5 more minutes and then remove from heat. Serve with a big hunk of homemade bread. Feel all warm and cozy. Find happiness.
