Hawaiian BBQ Chicken Skewers

Ingredients

 

Marinade—

 

1 Cup Pineapple Juice

¾ Cup Soy Sauce

¾ Cup Ketchup

¾ Cup Brown Sugar

2 TBSP Sriracha

2 TBSP Minced Garlic

1 TBSP Minced Ginger

1 TBSP Red Pepper Flakes

 

Skewers—

 

2 Pounds Skinless/Boneless Chicken Thighs

1 Fresh Pineapple, cored and cut into chunks

1 Red Onion, cut into 1-inch pieces

2 Sweet Peppers, any color, cut into 1-inch pieces

1 Yellow Squash, sliced thick enough to stay on skewer

1 Zucchini, sliced thick enough to stay on skewer

Directions

 

Step #1—

 

Pour all the marinade ingredients into a saucepan. Heat and bring to a boil. Reduce heat, simmer for 15 minutes or until sauce is thickened. Let cool.

 

Step #2—

 

While sauce cools, cut chicken into 1-inch size pieces and place in a gallon Ziploc bag. Add ½ cup of marinade to bag. Seal and shake until chicken is coated. Let sit in fridge for at least an hour.

 

Step #3—

 

Assemble Skewers. Pineapple, chicken, onion, peppers, chicken, pineapple, squash, zucchini, etc. Until ingredients are all used. Preheat the grill to medium high heat. Grill kabobs 12-14 minutes, turning a few times and brushing with some of the leftover marinade. Serve with remaining marinade as dipping sauce. Wow your friends and family. Have the best summer ever!
