Parmesan Tomato Zucchini Bake

 

Ingredients—

 

2 Medium Zucchini, sliced

2 Medium Yellow Squash, sliced

1 Eggplant, sliced (optional)

5 Medium Tomatoes, sliced

¾ Cup Parmesan Cheese, shredded

1 tsp Garlic Powder

1 tsp Onion Powder

1 tsp Italian Seasoning

Salt and Pepper, to taste

 

Directions—

 

Step #1—

 

Preheat oven to 375 degrees. In a baking dish, arrange zucchini, squash, eggplant, and tomato slices in an alternating pattern.

 

Step #2—

 

Top veggies with spices and cheese. Bake in the oven for 30 minutes or until veggies are fork tender and cheese is melted. Serve alongside your grilling favorites and enjoy summer’s bounty!
