Strawberry Cobbler—

 

Ingredients—

 

2 lbs. Strawberries, quartered

¾ Cup Sugar

2 TBSP Cinnamon

¼ Cup Cornstarch

1 Lime, zested and juiced

1 ¾ Cup Flour

1 tsp. Baking Soda

¼ Cup Sugar

Pinch of Salt

½ Cup Butter, cold, cut into ½ inch pieces

½ Cup Buttermilk

1 Egg

1 tsp. Vanilla

Whipped Cream and Vanilla Ice Cream for serving

 

Directions—

 

Step #1—

 

Preheat oven to 350 degrees. Add quartered strawberries to 10-inch cast iron skillet. Mix in sugar, cornstarch, cinnamon, lime zest and juice. Stir gently until well-combined.

 

Step #2—

 

For topping—combine flour, sugar, and salt in a bowl. Add sliced butter and using hands, mix until butter is pea shaped and sized. Whisk buttermilk, egg, and vanilla together. Then add to flour mixture. Continue to whisk until combined. Spoon topping over strawberries with large serving spoon.

 

Step #3—

 

Bake for 55 minutes, or until top is golden and strawberry mixture is bubbling on the sides and in the middle. Allow to cool slightly. Then serve warm with ice cream and whipped cream. Enjoy on the porch with your feet up and soak in the best of summer.
