Twice Baked Potato Casserole

 

Ingredients—

 4 lbs. Golden Potatoes, cubed and boiled for 15 minutes or until fork tender but not mushy

1/3 Cup Butter

6 oz. Cream Cheese, softened

1 Cup Sour Cream

½ Cup Milk

1 tsp. Garlic Powder

1 tsp. Paprika

1 tsp. Celery Seed

1 TBSP Parsley

Salt and Pepper, to taste

2 Cups Shredded Cheddar Cheese

3/4 Cup Shredded Parmesan

3 Green Onions, trimmed, and thinly sliced

10 Slices Bacon, cooked and crumbled

 

Additional toppings—more sliced green onions, crumbled bacon, and cheddar cheese

 

Directions—

 

Step #1—

 

Preheat oven to 375 degrees F. Cook first wave of ingredients—boil potatoes and cook bacon.

 

Step #2—

 

Mash potatoes once soft. Add butter, cream cheese, sour cream and milk. Mix well. Depending on consistency, you may want to add more milk for a richer consistency.

 

Step #3—

 

Add spices, cheeses, green onions, and bacon. Mix well. Spoon potato mixture into a baking dish. Sprinkle with toppings. Bake for 30-35 minutes, or until cheese is melted and center is hot. Serve as a side dish, enjoy completely, and enjoy this extra special Twos-Day!
